Hands cupping a warm bowl

Best part of fall food? Hands down - SOUP. Chicken noodle soup, turkey soup (oh those Thanksgiving leftovers, YES), tortilla soup, etc. There's something about holding a warm bowl in your hand as you sip delicious broth while wrapped up in a blanket on a chili day (pun intended). Naturally, with it getting cooler and fallier (yeah, I know that isn't a real word), I've been looking for new recipes to try - comfort food like slow cooker recipes, soups, and bakes. Cooking Light magazine is my go-to. They have recipes that are easy and always tasty! I was flipping through my magazine a few nights ago and found a stack of recipes I ripped out and I am prepared to share my faves!

This one is a sweet potato ginger soup from Cooking Light, with a few tweaks of my own.

What you'll need:
1 tablespoon olive oil
1 cup chopped onion
2 pounds sweet potatoes (peeled, cubed)
1 tablespoon minced ginger
4.5 cups unsalted chicken stock
Sea salt
Fresh ground black pepper
1/4 teaspoon ground cinnamon
1 (15 oz) can cannellini beans, unsalted (rinsed, drained)
1/4 teaspoon crushed red pepper
Pumpkin pie spice
Toasted coconut chips
Pumpkin seeds

The steps:

1. Heat a large pot over medium high heat, add 1 tablespoon olive oil and stir to cover the bottom of the pot. Add 1 cup onion, saute for 4 minutes. Add 2 pounds cubed sweet potatoes and 1 tablespoon minced ginger, cook for 2 minutes. Add 4.5 cups stock, sea salt (~1/4 teaspoon), pepper (~1/4 teaspoon), 1/4 teaspoon cinnamon, and can of beans. Bring this mixture to a boil (and take a few good sniffs because it smells SO GOOD. Cover, reduce heat, and simmer for 20 minutes.


2. Place half potato mixture in a blender, blend until fully pureed. Put into a large bowl or pot. Blend the other half of the mixture and add to your bowl/pot. Keep 4.5 cups of soup. Stir red pepper into the 4.5 cups of soup. Divide among 3 bowls.

3. Top with toasted coconut chips and pumpkin seeds. Sprinkle lightly with cinnamon and pumpkin pie spice. Serve and enjoy!
